Loading... Please wait...Some of the best wine of the world come from Switzerland, but the Swiss tend to keep them for themselves. Domaine de Dalley, in the Lavaux area, is one of the few vineyards to sell their wine abroad.
The Lavaux area, stretching from Lausanne to Vevey and Montreux, presents some of the most famous vineyards in Switzerland that all share one of the most amazing vineyard view in the world. Impressively situated on steep, terraced hillsides. It rises up from the Lake betwen Villette and St Saphorin with a slope that can reach up to 65%. In this region, helicopters must sometimes be used during the harvest period and for vine treatments. This region is now recognised by Unesco, a worldwide heritage protected for its specific vineyards, grounds and traditional work done for more than 800 years.
Switzerland is the only country to fully exploit the special qualities of the Chasselas and to produce from this one grape, a surprising diversity of delicate and fine white wines. Vaud is Switzerland's second wine growing region. It is best known for its fresh, fruity wines produced from the Chasselas grape. Their subtle and varied aromas reflect the different soils of the region.
Special soils and unique characters: the 3 suns, a typical and regional advantage to mature the grapes
In this region, grapes benefit from what is referred to as the 3 suns. The first sun is the natural one, the second is given by the reflection of the sun on the lake, located south of the vineyard while the third is given by the hillsides walls, which is so steep that it creates a stonewall that accumulates and reverbarates even more heat to the grapes providing hot temperatures near the ground for many hours through the night.

Domaine du Daley, a traditional vineyard for more than 600 years, founded in 1392 and the oldest trademark registered in Switzerland. Located in the Lavaux area, it produces traditional Swiss grapes such as Chasselas, Pinot Noir, but also specialities such as Chardonnay, Viognier, Gamaret and Garanoir.
All processes used to produce the wines fully respect the environment. All treatments, as well as the harvest are done manually. The production remains under close supervision at all times and, to obtain the highest quality wines, a selection is undertaken twice during harvest: the first occurs directly in the vineyard and the second, right before pressing the grapes. All wines are produced only from the vineyard's grapes and entirely at the domain.
Mr Saverin, the actual owner, was born at the Domain. His father worked there for more than 24 years and in 2003 he bought the vineyard. His son Cyril, has been involved in this wonderful-A nose for wine..maker Cyril Severin, certainly has got one! Since taking over the family vineyard in 2003, Cyril has been blending his wines the way a perfumer create fragrances. Using all of the 11 grape-varieties available to him
( Chasselas, Chardonnay, Viognier, Sauvignon Blanc, Pinot Noir, Gamaret, Garanoir, Merlot, Cabernet Franc and Syrah.) as base material to produce wines greater than the sum of their parts. The wines are produced on the Estate and have won many prizes at regional and international competitions!
More than ten hectares are combined under the Lutry, Villette, Epesses and St. Saphorin Appelation, so as to be able to extract the best grapes possible, all with their unique earthy flavour.
Wine-making
The whites (Chasselas and Chardonnay) are made in 9 oak barrels, each containing from 3800 to 6000 litres; a small quantity is produced in stainless-steel tanks. The speciality whites (some of the Chardonnay, Viognier, Sauvignon Blanc, Blanc de Noir, as well as our Chasselas Collection) are made in 250-300/l barrels. The red wines are made in metal tanks with mechanical sparging of the cap, then in oak barrels, according to the specialities.
The Pinot Noir Tradition is finished in the last two oak barrels, containing 4000-5000 l, and in stainless-steel tanks. All of the other specialities are finished in the 250-300/l barrels (Merlot, Cabernet, Syrah, Plant Robert, Gamaret and Garanoir).
